Welcome to Restaurant Ansvar – Greenery Lab.

Ansvar offers a unique culinary experience with an organic approach and sustainability in mind. We have a passion for vegetables, legumes and mushrooms, and we let them play the main role in our dishes. We work with Danish organic suppliers to ensure that we only use the best seasonal produce.

We strive to give our guests an evening filled with new impressions and surprises. We experiment with fermentation, pureeing and drying to create new taste experiences that challenge and surprise. We want our guests to leave the restaurant with a sense of having learned something new and different.

We take responsibility for the environment

Sustainability is incorporated as part of the Ansvar concept and is seen not only on the menu but
in all other aspects of our restaurant. Our tableware and menus are made from recycled materials, and we work actively to prevent food waste by using all parts of each ingredient and converting the excess parts into puree, stock or dried herbal powder.

At Ansvar, you can buy sustainably caught fish from FiskeriKajen or pork and lamb from local suppliers with a focus on animal welfare.
